Presiding over Hanoi’s trendiest, most happening restaurant and lounge, chef/owner Bobby Chinn – who is half Chinese, half Egyptian – apprenticed under San Francisco’s Hubert Keller and Gary Danko. Chinn imbues his traditional Vietnamese dishes with a modern twist, filling his spring rolls, for instance, with filet mignon. The stylish, romantic restaurant and lounge – recently opened in a new, though less central location – are full of art, silk curtains, and candles. In the lounge, beautiful people make themselves comfortable on velvet banquettes covered in silk pillows. Live music and performing arts can sometimes be enjoyed here as well. For an extra two bucks, the staff will tell you that you’re beautiful – all night long.
