Once only reachable by private plane in its 50s heyday, the newly rebranded One & Only resort now features a super-long driveway for more convenient access and additional beachfront casita suites, bringing the total number of rooms to 172. The resort is tucked into a lush forest (rare for this desert town) with a championship golf course. New suites flaunt towering headboards, an eye-popping color scheme, and outdoor plunge pools. Standard rooms are still anything but, with Mexican décor, tiled floors, slick bathrooms with immense showers, and terraces or balconies with sea views. Welcome tequila drinks and snacks will help you start settling in. The onsite boutique showcases Missoni, Stella McCartney, and Christian Louboutin espadrilles created exclusively for the resort and chic, sundress-style wedding dresses for impromptu vow renewals and ceremonies. The resort is also home to Jean-Georges Vongerichten’s Asian-EuroMexico style Market restaurant, his first Mexican venture, and the Mandara Spa which offers individual treatment villas with walled gardens with plunge pools. Just like most hotels, Palmilla’s pools are the places to be, where oxygen mist spritzes, sunglass cleaning, and audio books are some of the many free amenities. However, there is also one of the rare swimmable beaches in the cove next door, which makes the resort a top pick for the five-star set. Plus, ever since the hotel re-opened with a bang hosting John Travolta’s 50th birthday party, it’s been attracting the Hollywood crowd.
