Le Chalet: Club Med Quebec Charlevoix, Canada

80% of culinary ingredients at this new ski resort are sourced from within 65 miles of the property — which, given Quebec's wildly disparate four seasons, is quite impressive. La Chocolatería: La Casa de la Playa by Xcaret, Mexico

La Chocolatería — which serves up nearly too-cute-to-eat chocolate treats — is helmed by acclaimed chocolatier and pastry chef Mao Montiel. The unique concept, which doubles as an art gallery, is located inside the adults-only La Casa de la Playa by Xcaret in Riviera Maya.

Cocina de Autor: Grand Velas Riviera Maya & Grand Velas Los Cabos, Mexico

Bruno Oteiza and Mikel Alonso teamed up to create this innovative molecular gastronomy eatery at Grand Velas Riviera Maya, where the prawns with smoked cream and honeydew mole are a must-try. Meanwhile, the restaurant's Grand Velas Los Cabos location, led by Michelin-starred chef Sidney Schutte, is best known for the eccentric yet delicious "tuna bubble" dish (pictured).

When sushi is paired with panoramic seaside views, you know it's going to be good — and the Insta-worthy plating at Sushi Sky Bar at Grand Fiesta Americana Los Cabos makes the experience all the more special. In addition to sushi rolls, there is also Birriamen (fusing Mexican shredded beef soup with ramen) and a dessert called "Sweet Ending" (a pastry that combines matcha, caramelized almonds, and white chocolate).

Highlights include lobster medallions, crayfish bisque, and slow-cooked jerk beef short ribs.
